Tequila is made from blue agave, mostly in Jalisco, Mexico. Mezcal can be made from many kinds of agave, and the agave hearts are usually roasted in earth pits, which gives it its smoky taste. On the shelf: Mezcal Union and Bozal for mezcal, and Lunazul, Casamigos, Don Julio and Clase Azul for tequila.
