The piñas are slow-roasted in traditional brick ovens, fermented with a proprietary yeast blend, double-distilled, and rested briefly in stainless steel before bottling. The nose carries fresh agave, citrus zest, white pepper, mint and vanilla; the palate is silky and medium-bodied with bright sweet agave, grapefruit and black pepper; and the finish is long, clean and peppery.
